We are very excited to release our rst wine solely o the Carver Vineyard. Planted in 1980, Carver boasts a south facing slope at 1550’ on York Mountain just 8 miles from the Paci c. Plenty of sunshine, cool coastal breezes and a long growing season make it an ideal location to grow unique yet correct Cabernet Sauvignon. What more could a winemaker want? Aged for just over 3 years in a selection of French and Hungarian barriques, this wine is built for the long haul. A savory, cool climate nose of black olive and tobacco open to reveal a sweet dark berry and chocolate palate with a round anise nish. is wine is well structured with a wonderful balance of richness and energy that are framed by ne tannins. It was an alluring dinner companion to a chipotle and cocoa rubbed grass fed beef rib steak. Drink 2014-2030
“A rich, sumptuous, layered wine, the 2010 Cabernet Sauvignon, from the historic York Mountain AVA, hits the palate with blue and black fruit, grilled herbs, cassis, lavender and violets. Today, the 2010 is remarkably fresh and primary. Hints of sage, rosemary, tobacco, iron and leather wrap around the structured nish. 2012 Cabernet Sauvignon, Carver Vineyard
The 35+ year old vines at Carver set a small crop and ripen at their own pace up on the windswept slope on York Mountain. The beauty of this site is that it produces Cabernet Sauvignon that tastes like the classic Cabernets of old. In the glass aromas of currant, camphor, pencil shavings, forest oor and juniper berries meld together. The palate engages the senses with layers of creme de cassis, blackberry, espresso, and nicely integrated oak. this is a seamless and seductive beast that should delight for many years to come. Melt-in-your-mouth, slow smoked Maha Estate pork ribs would be a pleasure with this wine. Drink 2015-2030
