There is perfection in imperfection. Inspired by the sweet wines of Banyuls, we utilize the beautiful yet puckered clusters, that would otherwise be discarded, to make this delicious dark nectar. It has since become an annual tiny passion project. The must was bathed in grape spirits a little more than half way through fermentation, preserving just the right amount of sweetness. It is then pressed into glass bon-bons to concentrate in the sun for 12 months reducing and caramelizing the wine. This vintage was racked to barrel to gain further complexity until bottling, for 5 years to be specific. “She’s layered and complex while still retaining a twisted dark wit.” Open and enjoy for months. This wine is pre oxidized so once you pull the cork, if you don’t drink it all immediately, store it in your wine room and enjoy over time.
